Kale & Avocado Salad

One of my favorite high fat, nutritious spring salads...so much goodness in this!

Serve with your fave protein or have it on its own.

 

Food Blog for the Week:

Kale & Avocado Salad

 

Makes 1 Serving

140g Raw shredded kale or mixed salad
1 large hard-boiled egg
1 tablespoon hulled hemp seeds
1/2 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Pinch Himalayan Pink salt
Pinch black pepper
1/2 medium avocado
1/4 cup nutritional yeast flakes
1 rasher nitrate-free bacon

Add kale, egg, avocado and hemp seeds to a bowl and set aside. Cook bacon to your liking and add to salad.

Whisk together the yeast, olive oil, vinegar and spices to a separate bowl. The mixture will be pretty thick, so either spread with a knife or drop onto lettuce to serve.
